Slowly making my way through my hurricane food I don’t need anymore and wow, beanless chili has got to be the pre-made food with the highest ratio of tastiness to visual appeal. That is slop, especially before you cook it, but damn is it tasty slop. I honestly might even prefer it to chili with beans? Mostly for the texture admittedly.

Picked up some fried catfish and crawfish étouffée, so I’m eating well today! :star_struck::yum::relieved:

HOUGH deeply jealous. Love catfish and crawfish both. Miss the Gulf south seafood something fierce.

Tonight’s venture is a white chili, courtesy of our roommate’s tomato vendetta. First time trying one. Wife’s doing the cooking since I’m burned the hell out from doing fieldwork today. Smells good so far and curious to try it. I still miss tomato-based chili but this could be a good substitute.

Chili was tasty! Surprised at how well the chili flavor carried over even without tomatoes. Unfortunately the beans are still a bit of a no-go for roomie, but was a worthwhile experiment.

at least you can have your tomato chili back?! I can’t imagine my life without tomatoes…

There are a lot of traditional chili recipes that get their color and flavor from the chile peppers instead of tomatoes or beans, maybe one of those would work for your roommate?

Or you could try the baking soda thing, depending on what your roommate’s situation is.

It’s one of those things where in some cases we can get some foods where removing the tomato for their portion is easy (pasta, chicken parm, build-your-own tacos/nachos/wraps etc.). Chili is, understandably, a bit fucking Difficult. Aside from that me and my wife have tomatoes in our restaurant fare.

The white chili we tried was one of them! Tasted good but (gross) Roomie and wife both had brief “why is this chili so threatening to me” moments while eating, and then at the end wife realized the color and texture reminded her of vomit. So I think that’s two folks it’s been spoiled for now, riplmao. Was worth a shot though.

It is one of those cases where we do want to continue sharing meals with roomie, both bc we like to and bc they’ve got a lot of adulting to catch up on - home was not a good place for them or for trying to develop independence. (I am still profoundly sour over how many of my white friends were never taught cooking skills before they moved out. It feels like a failure of parenting.) But it is somewhat of a frustrating logistics problem when a lot of the relatively easy staples me and my wife used to make together have been knocked off the list because of their food limitations. Just need to rebuild that stable as well as a list of substitutes that roomie can start making for themselves as well.

quick question is your roommate also my roommate. I like to joke that I live with my wife and teenage son (who is 30 years old) (and it’s only half a joke)

They’re not, because they’re 25. But yeah, sort of. We gave them the roommate spot because their parents are Godawful and we figured getting them tf out would be better for them longterm.

We. Try not to infantilize them or frame them as like, a kid, but yknow. Comparisons will be made, etc. They joke about it too. Learning how to adult in a shared living situation that isn’t actively wrecking them is a start, and one that will take some time. It’s been almost 4 months and I hope it’s been helping.

Very expensive but easily one of my favorite ways to do a night out.

no photos but I made mac and cheese from scratch for the first time ever and it was incredible. ended up having it alongside a bunch of roasted brussels sprouts that we got for very cheap at the shop.

Picked up some salmon yesterday when we went to get our CSA flour pickup for the year and I made a mustard-maple glaze for it. Very tasty. And now that I have my good flour again I can start baking bread once more. Boule city, here I come!

from a few days ago. butternut squash and leek risotto with toasted pine nuts.

and from even more few days ago. “southwest” chicken salad. this is pre-dressed since we wanted to be sure we liked the dressing before committing the entire salad to it.
